Preparation of pizza with figs, brie and thyme on the BBQ
Since we love challenges, we choose to make the pizza dough entirely in-house. Nothing tastes better than a home-made pizza, right?
Put the flour in a large bowl and make a well in the middle. Crumble the yeast. Fill another bowl with lukewarm water and add the crumbled yeast to it. Stir briefly and slowly pour the mixture into the well of the flour. Add the olive oil, salt and sugar and mix and knead until you have a homogeneous dough. After this, let the dough rise for one hour under a damp towel in a warm place.
After an hour, you can divide the dough into several portions. Turn the different masses of dough into balls and let them rise for another quarter. After this, sprinkle enough flour on the work surface and roll out the dough into pizzas.
For the preparation of this pizza with figs, brie and thyme, we use the Barbecook Stella. Turn on the burners of the Stella, put your Barbecook pizza plate in the middle (Dynamic Core) and let it warm up for about 15 minutes. Via the built-in thermometer, you can easily maintain control over the temperature in the gas barbecue.
Spread the rolled out pizza dough with tomato paste. Break the brie and mozzarella into pieces and divide over the dough. Cut the fresh figs into wedges and spread these over the dough as well. Season the pizza with fresh thyme, pepper and salt.
Put your pizza on the barbecue using the Barbecook pizza spatula and let it grill for 12 to 15 minutes under a closed lid. Remove the pizza from the barbecue and cut into pieces with the Barbecook pizza cutter. Finish off with some good olive oil and extra thyme, if desired.
